Banana-Nut Bread: Submitted by: Ed Cook | Date Added: 3 Jan 2013 Ingredients:

2 cups Self-Rising Flour
1 cup Sugar
1/2 teaspoon Baking Soda
1 cup Chopped Pecans
1/2 cup Butter or Margarine, melted
3 very ripe Bananas, mashed
2 large Eggs, lightly beaten
1/4 cup Plain, Low-Fat Yogurt (optional)
1 teaspoon Vanilla Extract

Cooking Instructions:

1. Grease and flour bottom of 9" x 5" loaf pan.
2. Combine first 4 ingredient in a large bowl. Stir together melted butter, mashed banana, eggs, yogurt (if desired) and vanilla in another bowl; add to dry ingredients. Stir just until moistened.
3. Pour batter into a prepared pan.
4. Bake at 350 degrees for 1 hour to 1 hour 10 minutes or until a wooden toothpick inserted comes out clean. Cool in pan on a wire rack for 10 minutes; remove from pan.
