#1 bulk Italian sausage
1 cup of chopped onion
3 cloves garlic - minced
5 cups beef broth
2 cup chopped tomatoes
1 8oz can tomato sauce
1 large carrot - sliced
1 green pepper - chopped
2 tbs. Italian seasoning
2 10oz pkg. tortellini
salt and pepper to taste
Parmesan cheese
Brown and crumble sausage in large sauce pan.
Remove sausage from pan. Add onions and garlic into pan.
Saute until soft and translucent
Return sausage to pan and add remaining ingredients except tortellini
Simmer 40 min - 50 minutes
Add tortellini and cook until tender 10 minutes
Salt and pepper as needed.
Serve with grated Parmesan Cheese sprinkled on top.
