Cecil’s Chili
( Large pot )

2# hamburger
1# diced pork chops
1 large onion
2 green pepper diced
1 cup diced celery
1 lb sliced fresh mushrooms
1 can chopped green chilies
1 can beef consume
1 large can tomato juice
1 large can diced tomatoes
1 can tomato sauce
1 can chili beans
Diced jalapeno to taste
2-3 shakes Tabasco sauce
4-5 shakes Louisiana Hot sauce
3-4 shakes Worcestershire sauce
3-4 shakes soy sauce
1 can beer (optional-the alcohol cooks out)
1 tsp minced fresh garlic
chili powder to taste ( probably at least 2 tbsp )
1-2 tsp ground cumin (To taste)
½ tsp fresh ground black pepper
salt to taste
Garlic salt if needed

Cooking Instructions:

Brown meat on high heat well, then add garlic, onions, celery, mushrooms, Worcestershire and soy sauce and half of the seasoning, continue to brown on high heat another 5 minutes, add the rest of ingredients, bring to a boil. Reduce heat, add the rest of seasoning and simmer 2-3 hours.

You can play with the amounts of seasoning you use. I like it spicy, so I use a lot of jalapenos and Tabasco.
