1# Andoullie - cut into slices
1 onion - minced
1 celery rib - minced
1 green pepper - minced
3 cloves garlic minced
1 tablespoon Cajun seasoning
6 cups chicken broth
2 cans red kidney beans - rinsed
2 cups of cooked rice

Cooking Instructions

1. Cook first 6 ingredients in 2 tsp oil in dutch oven over medium to high heat for 5 - 7 minutes.

2. Add chicken broth, beans and rice. Simmer for 5 minutes.

3. Salt and Pepper to taste.
