Medium Size Butternut Squash
½ cup of Parmesan Cheese Shredded
Olive Oil
Salt
Pepper
1. Preheat the oven to 375 and line a cookie sheet with parchment paper or non-stick reynolds wrap.
2. Peel the squash and cut into bite size cubes.
3. Place the squash into a large bowl – add a Healthy pinch of salt, pepper and olive oil along with the Parmesan cheese.
4. Stir all together.
5. Place squash on the cookie sheet and bake for 30 minutes – at the 15 minute mark flip the squash.
