8 eggs
1/3 cup milk
1/3 cup shredded cheddar cheese
2 tablespoon cilantro
16 oz ground chorizo or sausage of your choice

1. Preheat oven to 350 degrees

2. Spray a muffin tin thoroughly with nonstick spray.

3. In a large bowl combine milk and eggs whisk until blended.

4. Add cilantro, sausage and cheese, mix.

5. Spoon mixture into muffin tin, top with additional cheese if desired.

6. Bake 30-35 minutes until golden.
