1/2 cup finely chopped onion
1 1/2 tablespoon minced garlic
1 1/4 cup coke zero
3/4 cup tomato paste
1/2 cup water
1 tablespoon Worcestershire sauce
3 tablespoon mustard
1 teaspoon Cajun seasoning
1 teaspoon liquid smoke
1/2 teaspoon paprika
1 tablespoon cumin
1/2 teaspoon pepper
3 lbs boneless skinless chicken
salt to taste
1. Place chicken in a 6 quart slow cooker and salt well.
2. In a bowl, mix together remaining ingredients and pour over top of chicken.
3. Cook on low for 4-6 hours or until chicken is shreddable.
4. Remove chicken from slow cooker and shred in a mixer or with two forks.
5. If a thicker sauce is desired, cook juices at a simmer until sauce reduces to thickness desired.
6. Return chicken to sauce and stir well.
