1 envelope Taco seasoning
1 can diced tomatoes with lime and cilantro
3 cloves garlic - minced
3 bell peppers - cut into strips
1 sweet onion - cut into strips
1 lime-juiced
small tortillas
Toppings of choice
1. Place chicken breasts in the bottom of your 6 quart electric pressure cooker or Instant Pot and sprinkle with taco seasoning.
2. Top with tomatoes, garlic, peppers, onion and lime juice.
3. Lock lid into place and set valve to seal.
4. Set on Poultry setting (or Manual on High Pressure) for 8 minutes.
5. Use Quick release after cooking and serve with a slotted spoon onto tortillas, topping with garnish of your choice.
