1/2 cup diced red onion
2 tablespoons mayonnaise
1/2 cup plain low-fat Greek yogurt
1/4 cup white vinegar
1 teaspoon honey
kosher salt and fresh ground pepper to taste
1/2 cup chopped fresh parsley
2 tablespoon chopped fresh dill
1. In a large bowl, toss the cucumbers with the red onion. Set aside.
2. In a small bowl, whisk together they mayonnaise, yogurt, vinegar and honey until smooth.
3. Season with kosher salt and pepper to taste.
4. Pour the dressing over the cucumber mixture and toss gently.
5. Stir in the parsley and chill in the refrigerator until ready to serve.
