Ingredients

2 cucumbers peeled and sliced
3 green onions - chopped
salt and pepper to taste
1/4 cup sugar substitute (sweetener of your choice)
1/2 cup water
1 cup white vinegar

Cooking Instructions

1. Combine sugar substitute, water and vinegar in a large serving bowl.
2. Stir until the sugar substitute dissolves.
3. Add cucumber and onion and stir.
4. Salt and Pepper to taste and refrigerate.
5. You can serve immediately or refrigerate to strengthen tartness.
