2 pounds Brussels sprouts - halved and trimmed
2 large apples
4 teaspoons red wine vinegar
1. Preheat oven to 425 degrees.
2. Cut bacon into 1/2" pieces and arrange in a single layer on a large, rimmed baking sheet.
3. Bake until browned, about 10 minutes.
4. Add Brussels sprouts and add in a single layer on top of bacon. Sprinkle with salt and pepper. Roast until they begin to brown, about 15-20 minutes.
5. Meanwhile, core and cut apple into 1/4" pieces. Remove Brussels sprouts from oven and add apple.
6. Stir apples into Brussels sprouts and bacon mixture to combine.
7. Return to oven; roast until Brussels sprouts are browned and tender and apple has softened, about 10-15 minutes.
8. Add vinegar to Brussels sprouts and gently stir together to combine.
