Listed in: Pork

1 cup white rice
1 1/2 cups low sodium chicken broth
1 cup water
1 1lb of sausage (of your choice)
1 small onion diced
2 stalks celery diced
1/2 green pepper diced
1/2 red pepper diced
2 cloves garlic minced
2 tablespoons Cajun seasoning

Cooking Instructions

1. Bring rice, 1 cup chicken broth and water to a boil. Reduce to simmer, cover and cook for 15-20 minutes or until the liquid is absorbed. Remove from the heat and fluff with a fork.
2. In a large dutch oven or heavy stock pot over medium heat brown the sausage. About halfway through the browning process add minced onion, celery and peppers. Cook until the meat is browned and the onions are soft. Reduce heat to low. Add garlic and Cajun seasoning and cook for additional minute.
